Matcha muffins with red berries: the soft, fluffy recipe

Matcha and red berries are a perfect match: the soft, grassy note of green tea balances the tartness of raspberries. These muffins come together in a single bowl, no mixer required, and stay soft for days. Here's the recipe, with just the right amount of matcha for a lovely colour and a clear flavour, without any bitterness.
Ingredients (makes 12 muffins)
- •250 g plain flour
- •1 level tablespoon of matcha (about 6 g)
- •1 sachet of baking powder (11 g)
- •1 pinch of salt
- •140 g sugar
- •2 eggs
- •200 ml milk
- •100 g melted butter (or 100 ml neutral oil)
- •150 g red berries: raspberries, blueberries or blackcurrants, fresh or frozen
Method, step by step
Preheat the oven to 180 °C (350 °F). Sift the flour, matcha and baking powder together, then add the salt and sugar. Sifting the matcha is the key step: it's what prevents little bitter green specks in the crumb.
In another bowl, whisk the eggs with the milk and the lukewarm melted butter. Pour this over the dry ingredients and fold with a spatula, just until no flour remains. A slightly lumpy batter makes softer muffins, so don't overmix it.
Gently fold in the berries, fill 12 muffin cases two-thirds full, then bake for 20 to 22 minutes. The tip of a knife should come out dry. Leave to cool slightly before turning out.
The trick for evenly spread berries
Toss the berries in a spoonful of flour before adding them: they'll stay suspended in the batter instead of sinking to the bottom. If you're using frozen berries, add them straight from the freezer so they don't stain the whole batter.
Indulgent variations
- •White chocolate: add 80 g of chips, it pairs beautifully with matcha.
- •Gooey centre: tuck a spoonful of raspberry jam into the middle of each muffin before baking.
- •Lighter: swap half the butter for plain yoghurt.
Frequently asked questions
How much matcha should I put in muffins?+
About 6 g (one level tablespoon) per 250 g of flour. That's enough for a beautiful colour and a clear flavour, without bitterness. Always sift the powder with the flour.
Do matcha muffins lose their colour when baked?+
They darken slightly on the surface, which is normal. A good-quality, vivid green matcha keeps the crumb nicely green. Avoid baking them any longer than necessary.
How long do the muffins keep?+
Three days in an airtight container at room temperature. They also freeze very well: just warm them for a few seconds in the oven.
