Matcha, the essentials

Where does your matcha come from?+

Our matcha is grown in China, in the shade, then stone-ground following traditional methods. We'd rather be open and transparent about its origin than tell you a story: it's an organic matcha, smooth and naturally sweet, served to you with nothing to hide.

What's the difference between matcha and regular green tea?+

With green tea, you steep the leaves and then throw them away. With matcha, you drink the whole leaf ground into a powder, so you take in far more of its compounds (antioxidants, L-theanine, caffeine).

Does matcha give you energy like coffee?+

Yes, but differently. A 2 g bowl contains roughly the equivalent of half a coffee. The caffeine comes with L-theanine, an amino acid that smooths out its effect: instead of coffee's spike and crash, you get steadier energy and calmer focus.

Can I drink it every day?+

Yes, one or two cups a day fit perfectly into a daily ritual. As with any drink that contains caffeine, simply adjust to your own sensitivity.

Quality, organic and storage

Is your matcha really organic?+

Yes. The term "organic" is regulated under EU law: it guarantees cultivation without synthetic pesticides or chemical fertilisers. Since you consume the whole leaf ground into powder, it's a criterion that matters especially for matcha.

How is it different from a cheaper culinary matcha?+

Ceremonial grade comes from the first harvest: young leaves, a finer powder, a short bitterness and a vivid colour. It's made to be drunk on its own. A culinary grade is more astringent and designed for baking, where sugar and fat mask the bitterness.

How can I tell if my matcha is still good?+

By sight and smell. Fresh matcha is bright green and smells of cut grass. If it has turned yellowish, or smells of hay or cardboard, it has been exposed to air or light: it's still safe to drink, but the flavour is gone.

How long does matcha keep?+

Store it away from air, light and moisture, in an airtight container. Once opened, ideally enjoy it within a few weeks to keep its vivid colour and aromas.

Preparation

How do I make matcha without lumps?+

Two habits: sift the powder before mixing, and use water at 70 to 80 °C (never boiling, or the matcha turns bitter). Whisk in a zigzag motion until you get a fine foam.

Do I need a bamboo whisk to prepare this matcha?+

It's not essential. A bamboo whisk still gives the finest foam, but a small electric milk frother works very well. What matters more is sifting the powder and staying below 80 °C.

How many cups are in a 30 g pouch?+

About fifteen bowls prepared on their own (2 g per bowl), or around ten lattes, which need a double dose so the matcha holds its own against the milk.
